Lemon Pepper Salmon and Butter Lettuce Salad


This is one of my go-to meals when I am in a rush because it takes less than 5 minutes of prep-time and is absolutely delicious and packed with healthy fats that are great for the brain and heart! Keep reading for the recipe!


Lemon Pepper Salmon and Butter Lettuce Salad

Serves 1

Prep Time: 5 minutes

Total Time: 25 minutes


Ingredients:

1, 6 oz salmon filet

2 cups butter lettuce, roughly chopped

1/2 avocado, peeled and cubed

2 Tbsp extra virgin olive oil, separated

1 Tbsp fresh lemon juice

1/4 tsp lemon pepper seasoning (I like this one)

Red chili flakes and crushed pepper to taste


Directions:

  1. Preheat the oven to 400°F.

  2. Place the salmon fillet on a parchment paper lined baking sheet and lightly coat with 1 Tbsp olive oil. Evenly sprinkle the lemon pepper seasoning on the salmon and place in the oven for 15-20 minutes or until the salmon is done. (*You can also add a little bit of lemon juice on top of the salmon before placing in the oven if you are like me and love an extra "lemony" taste!)

  3. While the salmon is in the oven, toss the butter lettuce with the avocado, 1 Tbsp olive oil, lemon juice, red chili flakes, and crushed pepper to taste.


You can make this salmon with any side dish you want or prepare this salad with a different entree, but I personally love these two flavors together.
