Red, White, and (sort of, but not really) Blue Popsicles

It is almost the Fourth of July, and having red, white, and blue treats is a great way to celebrate! I created this recipe because I thought it was the perfect patriotic snack that is both delicious and super healthy!!!! Plus, who can pass up a good popsicle in the summer heat? I made this recipe for the first time when I had a ton of family over, and the kids LOVED it! So parents... this is an excellent way to sneak some fruit into your kids diets while giving them a festive treat this Fourth of July!

Red, White, and Blue Popsicles

I recommend purchasing some popsicle molds if you are going to try this recipe. There are a ton of affordable ones out there! I used the brand Zoku, and they work great! Depending on the size of the molds you use, some of the amounts of each ingredient may differ. 


Makes 6 Popsicles


Ingredients:

2 cups fresh strawberries (with the leaves removed)

2 cups fresh blueberries

1/2 cup vanilla greek yogurt (my favorite is from the Greek Gods brand)

1/3 cup lemon juice

1 tsp honey, separated


Directions:

  1. Red layer: Combine the strawberries and 1/2 tsp honey in a blender and blend until smooth. Pour the mixture into a bowl and set aside. Clean out the blender.

  2. White layer: In a different bowl, combine the greek yogurt and lemon juice, and whisk together until smooth.

  3. Blue layer: Combine the blueberries and 1/2 tsp honey in a blender and blend until smooth. Pour the mixture into a separate bowl.

  4. Pour 2 Tbsp of the strawberry, then lemon, then blueberry mixtures into each popsicle mold, and insert the popsicle sticks. Place in the freezer for at least 8 hours and then enjoy!!
