Soup is one of my favorite things to eat when it's cold outside, and this soup is definitely a good one!! I came up with this recipe because as a pescetarian (someone who eats fish but not meat), I am always looking for healthy, plant based proteins that are also delicious, and lentils definitely fit the bill! But fear not carnivores, I promise you'll love it too!!
Serves 6
Prep time: 15 minutes
Cook time: 50 minutes
Ingredients:
2 Tbsp extra virgin olive oil
1 yellow onion, diced
3 cloves of garlic, minced
1 tsp cumin
3/4 tsp ground coriander
1/2 tsp turmeric
1/2 tsp chili powder
6 cups low sodium vegetable stock
1.25 cups dried lentils, rinsed
1 sweet potato, peeled and diced
1 bunch of kale, chopped and stems removed
1/4 tsp salt
1/4 cup chopped parsley, optional
Directions:
In a large pot, sauté the onion and garlic in the olive oil for about 2 minutes on medium heat, stirring occasionally. Add the cumin, coriander, turmeric, and chili powder, and cook for another 2 minutes, stirring constantly.
Add the vegetable stock, lentils, sweet potato, and salt and bring to a boil. Then cover the pot and reduce to a simmer for 30 minutes.
Add the kale, stirring it until wilted, and cook for five more minutes.
Serve hot with the chopped parsley on top as a garnish if you desire.
